February's Recipe:

February's recipe is whole steamed fish, a traditional Chinese New Year dish.

Whole Steamed Fish

2 lb fresh or salt water fish 2 stalks green onion
1 tsp salt 1/4 cup cooking oil
1/4 cup soy sauce 3 slices ginger (size of quarter)
  1. Cut green onion into 1 inch lengths and shred lengthwise.

  2. Sliver ginger.

  3. Rinse fish and sprinkle with salt and place in wide shallow dish.

  4. Place ginger and onion inside and outside of fish.

  5. Place dish on steaming rack in wok or pan; cover bottom of pan with water.  Cover and steam for 20 minutes.

  6. Just before fish is done, heat oil in small saucepan until sizzling.

  7. Take fish from pan; pour off excess liquid.

  8. Pour hot oil over fish and then pour the soy sauce over the fish.
