CCBA Cookbook

"Favorite Recipes of the Augusta Chinese Community", 2nd edition

 

The Chinese Consolidated Benevolent Association is proud to present the 2nd edition of our cookbook, "Favorite Recipes of the Augusta Chinese Community".  The first edition was published in 1990 and dedicated to our parents who passed on their Chinese family dishes to us and to our children and friends. This second edition is dedicated to our CCBA children and to the "Children from China" families in the CSRA.  This cookbook provides not only old family recipes of our grandmothers and mothers but is a historical account of an essential element of the Chinese culture and its development into the present day culture in a Southern community of America. The recipes include those for soups, meats, seafood, and fowl.   There are special sections for rice and noodle dishes as well as “dim sum” items.  The recipes include both familiar dishes found in Chinese restaurants and family gatherings and the more exotic ones from the various regions of China.

Sample recipes from the cookbook:

Mushroom (Steamed) Chicken

3 lb chicken parts 8-10 dried Chinese mushrooms
1 slice fresh ginger, shredded 2 tbs thin soy sauce
1/2 tsp sugar 3 dried red dates
1/2 tsp salt 1 tbs sherry
  1. Wash chicken and chop into bite size pieces.

  2. Soak mushrooms 30 min and cut in half.

  3. Place chicken, mushrooms, and dates in a bowl; add remaining ingredients and mix.

  4. Steam mixture in bowl in large pot until chicken is done (45 minutes).

  5. Serve with white rice.
